Chickpea & Quinoa Veggie Burgers

chickpea & quinoa veggie burger — these are made using the “falafel” technique, which calls for soaking chickpeas overnight, draining them, and puréeing them with vegetables, herbs and spices. There are no binders such as eggs, breadcrumbs, cheese, mayonnaise, yogurt, etc. I love these with tahini sauce and quick-pickled onions.
